Editorial/Review Activity, clarification on meaning of date field

When adding a new editorial/review activity there is a date field, which only allows a single day to be specified. The PC of a workshop/conference usually occurs over a period of time so I suppose that the start date would be appropriate here. Might be worth clarifying this in the name of the field.

What would be a good way to capture this information. Would a start date & end date be appropriate? Would Start date & Number of Hours Undertaken be more appropriate?
